Servo motors and Voltage

I have been playing around with making some servo winches with esc control and have successfully ran a few overvolted on 3S - the increase voltage aids the line speed significantly!.. 

 

My query is this; the stated voltage range on a servo is generally due to the electronic control pcb from what I understand it. As I am running the motor only are there any restrictions within a limit of 3S? I’m guessing it will be to do with the max rpm of the motor?.. 

 

I ask this as I am considering some smaller servos for weight and space saving and before purchase want to work this out. And as I am currently considering and testing 12v servos for steering so I can lose the BEC and a load of wires I want this to apply to my winches.... 

 

Any thoughts??
