Buy your son a Tamiya kit, there are quite a few you could get at that budget. They are easy and fun to build, you could both do it together. Plus there are loads of spares to be had.

Truck or car/buggy

it depends on what your wanting.

something like a TT01 chassis with some off road rally tyres with rims, and a set of rims with tread grip tyres

a couple body shells, something like a nice touring car for dad, and maybe a rally car for son.

keep to the 5000mah battery, just buy a couple more , most folks will have a bag of batterys or a storage can full.

to last them most of the day / morning.

lipo, being a novice i would say use the nihm battery packs and upgrade the motor a little, from a 27 turn

to a 21 turn or even a 19 turn. even this small adjustment makes a difference you notice.
as son gets more older maybe grab a second chassis and then add a brushless system,

then upgrade the second when or as needed, you can also then step into lipos to.
