You've made a good start by getting a quote on a sensible car! TBH that's not bad at all. Insurance companies don't really like being conned about who's the main driver/policyholder so I'd be up front about what you're trying to achieve, at least that way you'll know everythings ok. The other issue with being a named driver is that in the majority of cases you won't earn any NCD (Directline and Churchill are exceptions to this, there may be others but see my prev comment about main driver, I don't think they'll be keen on that arrangement!) and NCD is your key to cheaper premiums. In most cases your 1st year NCD is worth around a 35% discount. If you can, also try and keep your mileage low. The fewer miles you do, the less likely you are to be involved in an accident so the quote will be cheaper, although getting experience driving needs to be balanced with this. Don't think about modifying the car either, this will do nasty things to the premium assuming the company will cover you. A lot won't insure drivers under 25 on a modified car.
